What Makes White Teas Special

  • White teas are not oxidized at all, and are thus the most delicate of all tea types. Use a teaspoon of leaves per 8 ounce cup. Bring the water to 180-185°F (just steaming) before pouring directly over leaves. Infuse for 3-4 minutes before straining and serve. The flavor of white teas unfold with each additional infusion.
